Enjoy a unique culinary experience this winter at Red Hill Truffles with Fiona Hammond – recipe developer, cookbook author and truffle hunter.
Learn the history of the farm, how truffles grow from Jenny McAuley, truffle grower, before you venture out to immerse yourself in the magic of a hunt. The truffiere is a place of wonder, rich earthy aromas and the amazing world of fungus. You will wander through tree-lined avenues with the truffle hunting dogs, unearthing the hidden black treasures.
Back in the truffle pavilion, Fiona will introduce you to the joy of cooking with truffles; showing you how to prepare truffle dishes to capture the unique aroma of these earthly delights. Fiona will employ seasonal produce that you can easily recreate at home. Bring an appetite to savour delicious dishes and to discover.
The session begins with a warm welcome beside the fireplace with a hot drink and sweet treat. We’ll be talking /chatting all things about cultivating truffles before heading outside to embrace winter and experience a hunt and harvest. Then it’s back to the warmth for a cooking demonstration with our freshly dug truffle treasures. You’ll taste generous samples of the truffle dishes being prepared. We’ll also get to you to do some hands-on preparation for a dish to take home to share with loved ones. You’re sure to leave inspired and wanting to include truffles in cooking at home.We cannot accommodate dairy-free, nut-free or vegan dietary restrictions.
You should bring the following:
- an apron
- a sealed container (about1 litre capacity) to take recipe samples home
